We make Jun Kombucha, Beet Kvass, Vegetable Ferments, Pickles, and Hot Sauces, all from noble ingredients. Crafted in a culture of community, they are living ferments that delight the senses and support well-being.


Beet Kvass

Inspired by traditional Eastern European beet kvass, we use organic beets and lactobacillus cultures to create a highly probiotic and revitalizing tonic rich in dietary nitrates. We have nurtured our living kvass starter culture for over a decade.

Medium-bodied, smooth and earthy, with tartness balancing the sweetness of the beets, and a deep red wine color. You will discover complex ‘terroir’ variability from farm to farm, and each batch brewed.

Honeybrew (Jun Kombucha)

Unique botanical beverages fermented and delicately sweetened only with organic wildflower honey - no cane sugar or concentrated fruit juice. Our Mother ferments are aged for months, and we brew with carefully sourced whole botanicals. Our techniques create a bright, delicate drink with distinct herb and tea flavors and no vinegary aftertaste.

Honeybrew pairs beautifully with food - we suggest sipping it from a wineglass for a sophisticated alternative to alcoholic drinks.

Vegetable Ferments & Pickles

“Vegetable Charcuterie” that is raw, vegan, live, and local. These artisan recipes are inspired by food traditions from around the world. We combine traditional pickling and fermentation techniques to create tastes and textures that are crisp, savory and fresh, enhancing the vegetables’ flavor and nutrition, and showing off their natural beauty.

Fermented Hot Sauce

One of the first commercially available living, fermented hot sauces, our Fermented Habanero has become a cult favorite. We buy our habanero peppers from Alvarez Organic Farm in Eastern Washington, and ferment them from three months to over a year, revealing the beautiful floral quality of these peppers. We then blend the peppers with fermented garlic and sea salt. Add deep umami flavor to any dish with just a few drops.
